What-a-melon Ice Lolly




Cool down and re-hydrate with this healthy, homemade ice lolly.

Ingredients:

~One whole watermelon
~800ml Coconut water
-one punnet raspberries
~one punnet Blueberries

Method

Cut the watermelon into pieces and blend with coconut water and raspberries until mixture is smooth.
Pour into ice lolly tray and decorate with blueberries. Freeze for 3 hours before serving iced cold.





Very Berry ONE LDN Cocktail


Be the life and soul of any party with this fruity little number.


Ingredients (per serving):

~Handful raspberries
~Handful strawberries
~Crushed ice
~75ml pink gin
~200ml slimeline tonic
~fruit to decorate


Method

Blend raspberries, strawberries, and a small amount of crushed ice with a splash of water, until
mixture forms a pink slush. In your serving glass, pour 75ml shot of pink gin over the remaining ice, add slush mixture and stir. Top with tonic and decorate with fruit before serving.




Quinoa Sunshine Salad




Smile through the sunshine with a quick and healthy dinner in less than 30 mins, perfect for those busy
summer nights.



Ingredients (serves 2):
~ 300g Quinoa
~1 can chickpeas
~100g cooked edamame beans
~Two whole avocado
~Beetroot chopped
~1 TBSP green pesto
~1 TBSP light mayonnaise
~1 Vegetable stock cube
~Feta Cheese to serve
~Salt & Pepper to taste


Method

Add vegetable stock cube to boiling water as per instructions, and stir to form stock. Add stock to a pan
with Quinoa and simmer on low for 18-20 mins, until quinoa is fluffy and cooked through. Drain excess stock, add chickpeas to quinoa and leave to cool. Meanwhile, blend one avocado with mayonnaise and pesto, and halve the remaining avocado. When Quinoa is cool add salt and pepper, mix in edamame beans and
serve onto two plates. Add chopped beetroot, and halved avocados. Spoon the avocado pesto mixture over the quinoa, and crumble feta over the top. Serve immediately.
